✨Easy vegan meal idea: Mexican chicken rice bowl

✨Easy vegan meal idea: Mexican chicken rice bowl 🍛

- Microwave 1 pack of your rice of choice according to packs instructions. I used the chicken & sweetcorn wholegrain rice from @coopuk

- Then fry one pack of @birdseyeuk green cuisine meat free Mexican mix over medium heat for 8 minutes until heated through

- Add your packet of rice to the pan mixture and stir. Heat for another minute or 2 then serve.

I love the chicken in this frozen mix and there is a nice flavour to it. I thought it would be spicy as many companies make that mistake when making anything Mexican or Indian. But don’t worry - This isn’t spicy at all just flavoursome.

If you like spice try adding some hot sauce. I added a little @franksredhot_uk with lime for a little spice and flavour. 🌶

*This would be really delicious made into a burrito too. You could add some cheese, avocado etc. 🌯

Something that has been on my wish list for a while is a beautiful watch from @votchwatch. I adore the colours and styles in this kindred gift set. The square face and strap options are really cute.⌚️✨

Their strap materials are 💯% vegan, free from PVC, heavy metals, flame retardants and have no added antimicrobial chemicals. They are produced with low VOC emissions and also incorporate recycled and renewable content. 🌏💗

I absolutely love the new salt beef pretzel roll from @marksandspencerfoodpr and I wish I got 2. I’m always in the mood for a pretzel and the salt beef in this is AMAZING - It tastes exactly how I remember. 😍🌱

I’m a big fan of these kind of New York sandwiches with cheese & pickles. Yummm 😋

If you love a pastrami sandwich then this is right up your street. You must try it. 🥪

Tried the new chick ain’t pizza from @dominos_uk tonight as well as the vegan nuggets. I was very impressed with both! 🍕

I expected the nuggets to be crap but they are definitely in my top 5. I mean while they’re certainly not delicious enough to pay £1 per individual nugget they have a great flavour, texture and coating. And I can be fussy when it comes to a crumb coating.🌱

I added mushrooms to the pizza because let’s face it they belong there. They don’t add too much vegan cheese (a mistake many make) which results in a kind of sloppy cheese sauce that runs off the pizza - no one wants that. They made the crust quite thick on mine I think but I won’t hold that against them. The chicken pieces are a great texture and flavour, pretty realistic. Similar to the kind of chicken I had in subways new vegan sub recently but nowhere near as good. All in all I thought the new offerings were great. A solid 9/10. I think they’re pricey however and not including them in any deals is bullshit, vegans like to save money too ya know. The pizza & nugs are priced at about £27

🍗The new T.L.C (Tastes like chicken) sub from @subway_ukireland is so good! I have one not far from my house so couldn’t resist trying this now it’s available.💗

It tastes like roast chicken and has a great texture and flavour. This is my favourite vegan option from subway so far. The patty is pretty meh, the meatballs are great but I can see myself having this more. They’ve nailed it with this one! 🌱🥖

- I got the new chocolate cookie too which is also 10/10 🍪

My toppings of choice: tlc, lettuce, cucumber, tomato, red onion, sweetcorn & garlic aioli on toasted tiger bread. This combo is an absolute DREAM 👌🏻🤤
