Ingredients
  • 4slices bread
  • 4tbsp hummus
  • 25g rocket
  • 1 courgette1cm thin slices
  • 1/2 aubergine1cm thin slices
  • salt & pepperto taste
  • 2tbsp pine nuts
  • olive oil
Instructions
  1. Preheat your oven to 200c
  2. Slice your courgette & aubergine into thin slices. (If you have a mandolin or slicer to do this it will make quick work of this task but a knife works just as well).
  3. Place your sliced veggies and pine nuts onto a baking tray, drizzle with olive oil and salt & pepper. Cook for about 20 mins until tender.
  4. Toast your bread then spread with the hummus. 1 tbsp per slice.
  5. Add the rocket to the toast then top with the roasted veggies and pine nuts. Add some more black pepper if you like then top with another slice of toasted hummus bread.
  6. Slice each sandwich in half and enjoy straight away or put them in a container in the fridge for later. I love the warm veggies in this personally but they're good eaten later when cold too.

Ingredients
Deconstructed Burger Patty
  • 2sprays fry light spray
  • 1pack Naturli mince
  • 1 onionfinely chopped
  • 2cloves garlic
  • 1 iceberg lettuceroughly shredded
  • 4slices violife cheese
  • 16 gherkin slices
  • 1 onionfinely chopped
  • 2 tomatoesroughly chopped
Burger Sauce
  • 3tbsp mayonnaise
  • 5tbsp alpro plain yoghurt
  • 2tbsp tomato puree
  • 1/2tsp garlic salt
  • 1/4tsp sweet smoked paprika
  • 1/4tsp onion granules
  • 2tsp white wine vinegar
  • 1tbsp American mustard
Instructions
  1. Spray a large frying pan with cooking spray over a high heat. Add the mince, onion and garlic and fry for 5 minutes, or until cooked through. Season well.
  2. Add the cheese slices on top of the mince and place under the grill to melt. Remove from heat once nice and melted.
  3. Mix all the sauce ingredients in a bowl with 4 tbsp of water until well combined.
  4. Add the the lettuce, gherkins, onions and tomatoes to 4 wide bowls.
  5. Spoon the beef mixture on top and drizzle over the sauce.

Naturli mince is my favourite mince that replicates a burger patty really well and is meaty. You can use whatever kind you like but I have pretty much tried them all and this is my favourite. *Available to purchase from Sainsburys

Ingredients
  • 80g Oumph! The Chunk
  • 1tbsp Vegetable oil
  • 1-2tbsp Hoisin sauce
  • 1squeeze Lime juice
  • 1handful Mixed salad leaves
  • 1 spring onion
  • 2handfuls diced cucumber
  • 4 mini tortilla wraps
Instructions
  1. Defrost The Chunk at room temperature for about 30 mins.
  2. Using your hands or a fork, tear The Chunk into long, thin pieces.
  3. Fry Oumph! in vegetable oil, (med/Gas mark 4), until crispy.
  4. Place The Chunk pieces in a bowl, add Hoisin sauce and a squeeze of lime juice.
  5. Dice the spring onion and add, along with salad leaves and diced cucumber to the bowl then mix.
  6. Heat the tortilla wraps for 20 seconds in the microwave.
  7. Serve the mixture on the warm tortillas and enjoy!

Ingredients
  • a handul Fresh pineapple cut into small-ish chunks
  • 1whole Red peppercubes
  • 150g White rice or whatever rice you like
  • 2tbsp Brown sugar
  • 1tbsp Maple syrup
  • 1tbsp Soy sauce
  • 2tsp Garlic/garlic paste
  • 1tsp Srirachaadd more if you like spice
  • 1cup Pineapple juice
  • 2tbsp Coconut oil
  • 3whole Spring onions
  • a handful Cashewsoptional
  • a handful Coriander/cilantrooptional
  • a pinch Salt
  • a pinch Pepper
Instructions
  1. Heat a large saucepan on high with 1 tbsp of the oil.
  2. Add the pineapple & red pepper, stirring frequently & cook for 5 mins.
  3. In the meantime cook the rice separately on the hob/stove/microwave. However, you like.
  4. Add the sugar & syrup to the frying pan and stir. Cook until it starts to brown and become caramelized. (Around 5 mins.)
  5. Add the garlic & onions and cook for further 30 seconds. Lower the heat to medium.
  6. Put the cooked pineapple mixture in a bowl to the side for adding later.
  7. Add the rest of the oil and the cashews, stir briefly.
  8. Add the rice and give it a good stir.
  9. Add the pineapple mixture, juice, soy sauce, sriracha & salt, and peppe. Cook until it?s sticky and the liquid is absorbed.
  10. Serve and top with coriander as garnish. Enjoy!
Recipe Notes

Tinned pineapple & any oil is fine but I think these ingredients work really well.
