These Healthy Pancakes are made with wholegrain flour and natural sweeteners making them a great, nutritious breakfast. They’re totally vegan and really easy to make.

This recipe is much healthier than the other pancake recipes of mine so it means you can make them more and not feel so guilty.

They’re a great way to get your kids to have something delicious and nutritious. Oat flour pancakes with fruit in or served with fruit are definitely a great way to do that.

*You can also easily make these gluten-free by using gluten-free oat flour for the recipe instead.

No Compromise On Taste

Pancakes are one of my absolute favourite things to have for breakfast! I think they were one of the first recipes I played around with making vegan. I definitely am a huge fan of pancakes and waffles and eat them several times a week.

They taste absolutely amazing and are super easy to make! You can whip up the batter in 5 minutes or less and the cooking time is greatly reduced if you cook several at once.

I use applesauce and baking powder to make these vegan (no need for eggs). The maple syrup and milk add sweetness but you can use whatever plant milk or sweetener you like.

I love using this vanilla soya milk in many of my baking recipes as I think it adds a nice sweetness and gives me such great results. Personally I think water or soya milk work really well for pancakes and waffles (water makes them more crispy).

I made this recipe in collaboration with Buy Wholefoods Online who sell all my favourite ingredients and health products all in one place. In this recipe, I use their amazing wholegrain oat flour *gifted.

Blueberries

I love using this berry in scones, pancakes, muffins, waffles, just about anything. They work so well in so many recipes and really give them a nice burst of flavour.

I prefer fresh over frozen for most recipes but it depends what you’re making. There’s a lot more liquid in frozen berries so that can make your bakes soggier so you kind of have to experiment with that. I would use fresh Blueberries for this recipe though.

Blueberry Muffin Pancakes

Instructions

  1. Mix together oat flour, salt, and cinnamon in a large bowl.
  2. Add the vanilla, maple syrup, vanilla, applesauce and milk to the bowl and whisk until the batter is smooth.
  3. Add the baking powder to the batter and gently combine but don’t over mix.
  4. Fold in the Blueberries.
  5. Heat your frying pan over a medium heat.
  6. Pour 1/4 cup of batter for each pancake to the pan.
  7. Cook for 3-5 minutes, until you see little bubbles.
  8. Flip the pancakes and cook for a further 2-3 minutes until the lightly browned.
  9. Repeat with the remaining batter.
  10. Serve with butter and maple syrup.
